This study was carried out between 2012-2013 years. Aim of this study is
to determine microfungi that developed from tulum cheese samples collected from
various workshops, shops and houses in the spring, summer, autumn and winter
seasons from Erzincan city. The tops of the containers in which the samples
were excised with a sterile gutand the surfaces not in contact with the air taken
through sterile spatula were placed into sterile disposable specimen
containers. The taken samples were brought to the laboratory with cold carrier
bags and macroscopic and microscopic investigations were carried out. 200 fungal isolates were identified from the
cheeses and 14 species (Aspergillus
flavus, A. niger, A. parasiticus, A. versicolor, Fusarium
oxysporum, Geotrichum candidum, Penicillium chrysogenum, P. echinulatum, P. griseofulvum, P. palitans, P. roqueforti, P. solitum, P. verrucosum and Cladosporium herbarum) belonging to 5 genera (Aspergillus, Fusarium, Geotrichum, Penicillium and
Cladosporium) were isolated and described.
Bu çalışma 2012-2013 yılları arasında yapılmıştır.
Erzincan ilinde ilkbahar, yaz, sonbahar ve kış mevsimlerinde çeşitli üretim ve
satım yerleri ile evlerden toplanan tulum peyniri örneklerinde gelişen
mikrofungusların belirlenmesi amaçlanmıştır. Örneklerin bulunduğu bidonların
üst kısımları steril misina ile kesilerek çıkartılmış ve hava ile temas etmeyen
yüzeylerinden steril spatüller aracılığı ile alınarak steril tek kullanımlık
örnek kaplarına koyulmuştur. Soğuk taşıma çantaları ile çalışılacak laboratuvar
ortama getirilerek makroskopik ve mikroskopik incelemeler yapılmıştır.
Peynirlerden 200 fungal izolat tespit edilmiş ve bunlardan 5 cinse (Aspergillus, Fusarium, Geotrichum,
Penicillium ve Cladosporium) ait
14 tür (Aspergillus flavus, A. niger, A. parasiticus, A.
versicolor, Fusarium oxysporum, Geotrichum candidum, Penicillium chrysogenum, P. echinulatum, P. griseofulvum, P. palitans, P. roqueforti, P. solitum, P. verrucosum ve
Cladosporium herbarum) izole edilip tanımlanmıştır.
