Organic Acids and Sugars Contents in Some Selected Hawthorn (Crataegus spp.) Genotypes

Abstract

 In recent years, besides fruit quality features, nutritional values, and properties such as their use in the health and food industry have been sought in fruit species. Hawthorn is one of the fruits that draws attention to these aspects. This study was carried out to determine the sugar and acid contents that are important for health of wild hawthorn (Crataegus spp.) genotypes grown, in the Niksar district (Tokat province, Turkey). Fruit samples were taken from 11 different genotypes in 2018 and 2019. In these samples, organic acid and sugar content analyzes were made based on fresh weight by HPLC. Statistical analysis of the data was performed and the differences of the parameters according to the genotypes were tested. As a result of the study, acid and sugar contents of the genotypes were found to be significantly different. In genotypes, malic, succinic, and citric acid and sucrose, glucose, and fructose contents (mg / 100g) varied between 339.7-683.5, 241.2-757.8, 18.7-65.7, 72.0-5358.3, 883.5-2545.0, and 982.5-2436.8, respectively. The NK-AL 31 genotype attracted attention with its high sucrose and total sugar content, and the NK-AL28 genotype with a high total value of malic, succinic, and citric acid. It can be said that the results are noteworthy for breeding studies; they will contribute to the literature due to the limited number of studies on the subject and to its use in food products due to the benefits of sugar and organic acid for human health. On the other hand, these results also revealed that organic acid and sugar contents can be used in comparison and differentiation of hawthorn genotypes.

Seçilmiş Bazı Alıç (Crataegus spp.) Genotiplerinin Organik Asit ve Şeker İçerikleri

Abstract

 Son yıllarda meyve türlerinde meyve kalite özellikleri yanında besin değerleri ile sağlık ve gıda sektöründe kullanımları gibi özellikleri de aranmaktadır. Alıç da bu yönleriyle dikkat çeken meyvelerden birisidir. Bu çalışma Niksar ilçesinde (Tokat) doğada kendiliğinden yetişmekte olan alıç (Crataegus spp.) genotiplerinde sağlık yönünden önemli olan şeker ve asit içeriklerinin belirlenmesi amacıyla yürütülmüştür. Birbirlerinden farklı görülen 11 genotipten 2018 ve 2019 yıllarında meyve örnekleri alınmıştır. Bu örneklerde HPLC cihazı ile yaş ağırlık esasına göre organik asit ve şeker içerikleri analizleri yapılmıştır. Elde edilen verilere göre istatistik analiz yapılarak parametrelerin genotiplere göre farklılıkları test edilmiştir. Çalışma sonucunda, asit ve şeker içerikleri genotiplere göre önemli düzeyde farklı çıkmıştır. Genotiplerde malik, süksinik ve sitrik asit ile sükroz, glikoz ve fruktoz içerikleri (mg/100g) sırasıyla, 339.7-683.5, 241.2-757.8, 18.7-65.7, 72.0-5358.3, 883.5-2545.0 ve 982.5-2436.8 arasında değişmiştir. NK-AL31 nolu genotip yüksek sükroz ve toplam şeker içeriği ile ve NK-AL28 nolu genotip yüksek malik, süksinik ve sitrik asidin toplam değeri ile dikkat çekmiştir. Sonuçların ıslah çalışmaları için dikkate değer olduğu; konusunda az sayıda çalışılmış olması dolayısıyla literatüre ve şeker ile organik asidin insan sağlığına yararları nedeniyle de gıda ürünlerinde kullanımına katkı yapacağı söylenebilir. Diğer taraftan, bu sonuçlar alıç genotiplerinin birbirleriyle karşılaştırılması ve ayırt edilmesinde organik asit ve şeker içeriklerinin kullanılabileceğini de ortaya koymuştur.
