Abstract
Eating habit is necessary for human life and has a cultural aspect as well as a basic need. Each society has its characteristics in terms of nutrition style, cooking, and storage conditions of food. Besides, cuisine differs from society to society, region to region, and it changes over time. Both technology and living conditions have a great effect on this change. The storage and variety of food of Kyrgyz people, who lived as nomad for a long time. Preparing for winter is an important element of Kyrgyz cuisine and includes the synthesis of tradition and today's technology. The present study aims to examine and identify winter preparation among the Kyrgyz people. Besides, it investigates the cultural continuity, the synthesis of the past and the present, the traces of traditional life, and the influence of other cultures in the winter preparation of the Kyrgyz people. The answers to the following questions were sought: Which foods were prepared for the winter and under what conditions? How were they stored? Which storage methods and which tools were used? The data of this qualitative study were collected in seven regions of Kyrgyzstan through interviews and observations as well as the literature review.
