Abstract
Aims: In this study, it is aimed to determine the consumption levels of consumers in central districts of Antalya province. In addition, the factors that may have an impact on consumers' consumption of kefir were determined by logistic regression analysis.
Methods and Results: In this research, the central districts of Antalya were chosen as the research area. The main material of the research consists of data collected from 384 consumers through surveys. Consumers were divided into two groups (consuming and not consuming kefir). The data of the study belongs to November 2018 period. First of all, socio-economic indicators of households were examined. Consumers' kefir consumption status, consumption reasons, consumer behaviours were examined and recommendations have been put forward for consumer awareness about kefir consumption. Logistic regression analysis was conducted to investigate the factors affecting kefir consumption in subjects. The relationship between kefir consumption and gender, kefir consumption and education and kefir consumption and age were tested using the Chi-square independence test.
Conclusions: Kefir consumption rate in the household was 29.17%. In logistic regression analysis results, education, average household income and birth place indicators and kefir consumption probability were statistically related. These indicators were also statistically significant.
Significance and Impact of the Study: Studies on kefir consumption, consumers' preferences and habits are quite limited. This situation; increase the originality of the study. In addition, factors affecting consumption were analysed by logistic regression. The study is important for all companies producing kefir.
