Bu çalışmada Türkiye denizlerinde bulunan ve insan gıdası olarak tüketilen ekonomik önemi olan bazı kabuklu su canlılarının biyometrik özellikleri ve et verimlerinin incelenmesi amaçlanmıştır. Çalışma sırasında öncelikle Türkiye sularında var olan ve besin olarak tüketilen kabuklu su canlıları saptanarak, ticari önemi olan 16 tür ele alınmıştır. Bu türlerin total ağırlık, et ağırlığı, kabuk ağırlığı, vücut eni, boy, kalınlık ve et oranı ilişkisi incelenmiştir. Araştırma ile ülkemiz sularında doğal olarak bulunan bu türlerin et oranları hesaplanmıştır. Bu değerlendirme sonucunda et verimi açısından en pahalı olan canlının Venus verrucosa olduğu, ardından Ruditapes decussatus ve Ostrea edulis, et (verim) fiyatı açısından ise en ucuz olan canlının Mytilus galloprovincialis olduğu belirlendi.
In this study, it is aimed to examine the biometric properties and meat yields of some crustacean species with economic importance found in the seas of Turkey and consumed as human food. During the study, primarily crustacean species that exist in Turkish waters and are consumed as food were determined, and 16 species with commercial importance were discussed. The relationship between total weight, meat weight, shell weight, body width, height, thickness and meat ratio of these species was investigated. With the research, calculations were made by considering the meat ratios of these species naturally found in our country's waters and the sales prices of shellfish. As a result of this evaluation, it was determined that the most expensive creature in terms of meat yield was Venus verrucosa, followed by Ruditapes decussatus and Ostrea edulis and the cheapest creature in terms of meat (yield) price was Mytilus galloprovincialis.
