Arı poleni bal arıları
tarafından granüller şeklinde paketlenen ve daha sonra insanlar tarafından
kovanlardan hasat edilen en saf ve en zengin doğal besin takviyelerinden
biridir. Bal arılarının topladığı polen, proteinler, aminoasitler,
karbohidratlar, lipidler, vitaminler, mineral maddeler gibi besleyici temel
unsurlardan oluşur. Polenin sağlık üzerindeki olumlu etkisi fenolik bileşiklere
sahip olmasından dolayı antioksidan aktivitesine bağlanmaktadır. Son yıllarda
arı poleniyle ilgili çok sayıda araştırma yayınlanmıştır. Arı poleni ve diğer
arı ürünleri üzerinde birçok araştırma yapılmış olsa da, enzim inhibisyonu
üzerine çok az çalışma bulunmaktadır. Bu nedenle, bu araştırmanın amacı Ereğli
(Konya, Türkiye) bölgesinden bal arılarının topladığı karışık polenin etanol
ekstraktının total fenolik ve flavonoid içeriklerini ve antioksidan
aktivitesini, ayrıca bu ekstraktın kolinesteraz, amilaz ve glukozidaza karşı
enzim inhibitör potansiyellerini ilk kez tespit etmektir. Bu çalışmada rutin
çalışmalardan farklı olarak ultrasonik ekstraksiyon yöntemi kullanıldı.
Ekstrakttaki total fenolik ve flavonoid içerikleri de Folin-Ciocalteu ve AlCl3
yöntemleriyle tespit edildi. Antioksidan aktiviteleri serbest radikal süpürme
(DPPH ve ABTS), indirgeme gücü (FRAP ve CUPRAC), fosfomolibdat ve metal
şelatlama testleri gibi farklı yöntemlerle araştırıldı. In vitro enzim inhibitör potansiyelleri bir mikroplate okuyucuyla
ölçüldü. Aktiviteler standart eş değerler olarak değerlendirildi. Bu çalışmanın
sonuçları göstermiştir ki, i. antioksidan aktivitesi açısından, Ereğli
bölgesinden elde edilen arı poleni sağlığa yararlı formülasyonlarda ileride
kullanmak için değerli fonksiyonel içeriğiyle doğal bir kaynak olarak
düşünülebilir, ii. bu bölgenin poleni, Alzheimer ve Diabetes mellitus gibi
önemli sağlık problemlerinin tedavisi için doğal bir enzim inhibitörü kaynağı
olarak göz önüne alınabilir.
Pollen of bee is one of the purest and the richest
natural food supplements packed by honeybees into granules and subsequently
harvested from hives by humans. Honeybee-collected pollen is composed of
nutritionally essential substances such as proteins, amino acids,
carbohydrates, lipids, vitamins, mineral substances and trace elements. Its
beneficial effect on health is thought to be due to the presence of phenolic
compounds with its antioxidant activity. In recent years, many papers have been
published on issues concerning bee pollen. Although many studies have been
conducted on bee pollen and other bee products, there are few studies of enzyme
inhibition. Therefore, the aim of this study was to determine the total
phenolic and flavonoid contents and antioxidant activity of ethanol extract of
honeybee-collected mixed pollen from Ereğli (Konya, Turkey) region, as well as
the enzyme inhibitory potentials of this extract against cholinesterase,
amylase and glucosidase for the first time. In the present study,
ultrasonication assisted extraction method was used in contrast to routine
methods. Total phenolic and flavonoid contents present in the extract were also
determined by Folin-Ciocalteu and AlCl3 assays. Antioxidant
activities were investigated by using different assays, including free radical
scavenging assays (DPPH and ABTS) reducing power (FRAP and CUPRAC),
phosphomolybdenum and metal chelating assays. The in vitro enzyme inhibitory potentials were measured with a
microplate reader. The activities were evaluated as standard equivalents.
Results indicate that, i. in terms of antioxidant activity, pollen of bee
obtained from Ereğli region could be considered as a natural source of valued
functional ingredients for further use in healthful formulations, ii. this
pollen could be taken into consideration as a source of natural enzyme
inhibitors for the treatment of major health problems such as Alzheimer disease
and Diabetes mellitus.

In 1984, its name was changed to "S.Ü. Fen-Edeb. Fak. Fen Dergisi" and it was published under this name as of the 5th issue.
When the Faculty of Letters and Sciences was separated into the Faculty of Science and the Faculty of Letters with the decision of the Council of Ministers numbered 2008/4344 published in the Official Gazette dated 3 December 2008 and numbered 27073, it has been published as "Selcuk University Journal of Science Faculty" since 2009.
