Towards Advanced Technology and Pandemic Order in Food and Beverage Sector: Is It Possible to Say, ‘Bless Your Hands!’ to a Robot in the Near Future?

Öz

The food and beverage industry is one of the most dynamic sectors. It adapts to technological innovations, changes constantly, and can be shaped according to customer trends. The products and services in this sector, which meet the most basic needs, are developing and restructured thanks to new lifestyles that change with technology. Augmented reality applications, artificial intelligence and robots which are rapidly spreading in almost every field have occasionally been used during the creation and preparation of a new flavor in kitchens and sometimes in restaurants where these tastes are served. Considering that they also have the right to citizenship, it can be easily said that robots will be used much more widely in the future. When the compulsory situations such as changing trends, customer demands, and pandemic are taken into consideration, the idea of the emergence of kitchens and service areas where artificial intelligence and humanoid robots will play an active role is becoming widespread. In this study, studies in foreign literature, developments in technology in the food and beverage industry, IFR (International Robotics Federation) reports are examined, and the future changes in the food and beverage industry and the possible effects of these changes on the individual and society are discussed. It is thought that this study on new trends in food and beverage businesses and kitchens, market expectations and changes that may occur in the process of adapting to technology will contribute to the relevant literature. Therefore, international research and developments in the sector reveal that it will not be a surprise for us that robots will rapidly become widespread in the food and beverage sector (perhaps in the post-corona process with the effect of the pandemic) in the near future.

Yiyecek ve İçecek Sektöründe İleri Teknoloji ve Pandemik Düzene Doğru: Yakın Gelecekte Bir Robota ‘Eline Sağlık!’ Diyebilir Miyiz?

Öz

Teknolojik yeniliklere uyum sağlayan, sürekli değişim gösteren ve müşteri eğilimlerine göre şekillenen sektörlerden biri de yiyecek-içecek sektörüdür. İnsanın en temel ihtiyacını karşılayan bu sektördeki ürün ve hizmetler teknolojiyle birlikte değişen yeni hayat tarzlarıyla örüntülü biçimde gelişmekte ve yeniden yapılandırılmaktadır. Hemen her alanda hızla yaygınlaşan arttırılmış gerçeklik uygulamaları, sanal zekâ ve robotlar; kimi zaman yeni bir lezzetin ortaya çıkması ve hazırlanması esnasında mutfaklarda, kimi zaman da bu lezzetlerin sunulduğu restoranlarda kullanılmaya başlanmıştır. Günümüzde vatandaşlık hakkına da sahip oldukları düşünüldüğünde robotların, gelecekte çok daha yaygın bir biçimde kullanılacağı rahatlıkla söylenebilir. Değişen eğilimler, müşteri talepleri ve pandemi süreci gibi zorunlu haller değerlendirildiğinde geleceğin restoranlarında da sanal zekâ ve insansı robotların etkin rol alacağı mutfak ve servis alanlarının ortaya çıkabileceği düşüncesi yaygınlık kazanmaktadır. Bu çalışmada; yabancı literatürdeki çalışmalar, yiyecek-içecek endüstrisindeki teknolojiye yönelik gelişmeler, IFR Uluslararası Robotik Federasyonu raporları incelenerek yiyecek- içecek endüstrisinde gelecekte yaşanacak değişimler ve bu değişimlerin birey ve toplum üzerindeki olası etkileri tartışılmıştır. Yiyecek-içecek işletmelerindeki ve mutfaklardaki yeni akımlara, pazarın beklentilerine ve teknolojiye uyum sağlama sürecinde yaşanabilecek değişimlere yönelik bu araştırmanın ilgili literatüre katkı sağlayacağı düşünülmektedir. Nitekim yabancı araştırmalar ve sektördeki gelişmeler yakın bir gelecekte robotların yiyecek-içecek sektöründe (belki pandeminin de etkisiyle post-corona sürecinde) hızla yaygınlaşmasının sürpriz olmayacağını ortaya koymaktadır.
