Mucizevi Bitki Kenevir’in (Cannabis sativa L.) Gıda Endüstrisinde Kullanımı

Öz

Kenevir (Cannabis sativa L.), tarımı yapılan en eski tahıllardan biri olmasına rağmen içerdiği psikotropik maddeden dolayı esrar olarak kullanımı nedeniyle 20. yüzyılda kısıtlanmalara maruz kalmıştır. Ancak son yıllarda kenevir tohumu üretimi ve tüketimi, içermiş olduğu primer/sekonder bileşenlerin fonksiyonel faydaları, hakkındaki bilimsel çalışmaların hız kazanması ve uygulanan ülke politikalarıyla yükselme eğilimine girmiştir. Buna ek olarak kenevirin gıda-gıda bileşeni olarak kullanımı da son yıllarda yaygınlaşmıştır. Bu nedenle, bu çalışma, bilimdeki son gelişmeler ışığında kenevir tohumunun primer ve sekonder metabolitlerini ve gıda endüstrinde katma değerli gıda ürünlerine işlenmesi ve çeşitli faydaları hakkındaki araştırmaları içermektedir.

Use of the Miraculous Herb Hemp (Cannabis sativa L.) in the Food Industry

Öz

Although cannabis (Cannabis sativa L.) is one of the oldest cultivated cereals, it was subject to restrictions in the 20th century due to its use as marijuana for the psychotropic substance. However, in recent years, the production and consumption of cannabis seeds has tended to increase with the acceleration of scientific studies on the functional benefits of the primary / secondary components of this seed and the applied country policies. In addition, the use of hemp as a food-food component has become widespread in recent years. Therefore, this review includes research on primary and secondary metabolites of cannabis seeds and their various benefits and processing into value-added food products in the food industry in the light of the latest developments in science.
