Making wooden spoons in Köprübaşı is a traditional production process that has been continuing for long years. Spoons are completely handmade, and boxwood, hornbeam and alder are used. Boxwood is obtained from Rize, Artvin and Bolu; hornbeam and alder are obtained from Köprübaşı and the districts around. A room in a house or a room downstairs is used as workshop; production is generally made by one person. This productive activity has been carried out in Fidanlı, Akpınar, Karşı and Gündoğan neighborhoods and Çifteköprü village. This craft depends on the craftsman labor force; it is determined in 2011 that, approximately 40 craftsmen is working in the field; the youngest one is 25 years old while the oldest one is 80 years old. Food, tea, sugar and oil spoons and scoops are being produced. This economic activity, which has been continuing since the last periods of the Ottoman Empire, has been losing importance. Continuing this craft as a source of cultural heritage can be ensured by the courses opened by Public Education Center, by becoming cooperative, making promotion and marketing activities. Thus, it can be possible to make contributions to the region's tourism and economy (employment). Development of this handicraft, its situation today and solution suggestions are discussed in this research. Field observation, interviewing with spoon craftsmen, obtaining information from Köprübaşı Municipality and related institutions, reviewing Trabzon province yearbooks and resources are carried out and the research is formed accordingly.

Köprübaşında tahta kaşık yapımı uzun yıllardır devam eden geleneksel bir imalattır. Kaşık, tamamen el işçiliği ile şimşir, gürgen ve kızılağaçtan yapılmaktadır. Şimşir Rize, Artvin ve Bolu’dan, gürgen ve kızılağaç Köprübaşı çevresinden temin edilmektedir. Evin içinde ya da alt katında yer alan bir oda imalathane (atölye) olarak kullanılmakta; genellikle üretim tek kişi tarafından yapılmaktadır. Fidanlı, Akpınar, Karşı, Gündoğan mahallelerinde ve Çifteköprü köyünde bu üretim faaliyeti devam etmektedir. Usta işgücüne bağlı ve geleneksel olarak yapılan bu sanatta; 2011 itibariyle en genci 25, en yaşlısı 80 yaşında olmak üzere yaklaşık 40 usta çalışmaktadır. Yemek, çay, şeker ve yağ kaşıkları gibi türler ve kepçe imal edilmektedir.
Osmanlının son dönemlerinden beri devam eden bu ekonomik faaliyet gittikçe önem kaybetmektedir. Kültürel miras kaynağı olarak bu sanatın devam ettirilmesi; Halk Eğitim Merkezinin açacağı kurslar, kooperatifleşme, tanıtım ve pazarlama faaliyetleriyle sağlanabilir. Bu sayede; yörenin turizmine ve ekonomisine (istihdamına) katkı yapılabilir.
Araştırmada, daha çok babadan oğula geçen bu el sanatının gelişimi, bugünkü durumu, sorunları ve çözüm önerileri üzerinde durulmuştur. Yerinde gözlem, kaşık ustalarıyla mülakat yapılması, Köprübaşı Belediyesi ve konuyla ilgili kuruluşlardan bilgi toplanması, Trabzon Vilayeti Salnameleri ve kaynakların taranmasıyla araştırma oluşturulmuştur.
