Bioactive Peptides in Dairy Products and Their Functionality (Turkish with English Abstract)

Abstract

Milk proteins exert a wide range of nutritional, functional and biological activities. Bioactive peptides derived form hydrolysis of milk proteins and these have been identified within the amino acid sequences of milk proteins. The generation of bioactive peptides is contributed proteolitic enzymes naturally occurring in milk and enzymes from lactic acid bacteria or from exogenous sources. This review discusses formation of bioactive peptides and gives information about their health effects.

Abstract

Süt proteinleri besinsel, fonksiyonel ve biyolojik aktiviteye sahiptir. Biyoaktif peptitler süt proteinlerin hidrolize olması ile açığa çıkar ve süt proteinlerinin aminoasit dizilimi içinde yer alır. Biyoaktif peptitlerin oluşumu; sütte doğal olarak bulunan, laktik asit bakterileri tarafından üretilen ya da dışarıdan katılan proteolitik enzimlerle gerçekleşmektedir. Bu makalede biyoaktif peptitlerin oluşum şekilleri ve sağlık üzerine etkileri hakkında bilgi verilmiştir.
