Sokak Lezzetlerinin Gastronomik Değeri: İstanbul Sokak Lezzetleri

Abstract

Bu
çalışmanın amacı, gastronomik bir değer olarak kabul edilen sokak lezzetleri
kavramını Türkiye’nin en büyük ve en kozmopolit şehri İstanbul özelinde
incelemektir. 2017 yılı içerisinde gerçekleştirilen araştırmalar ve bire bir
deneyimlemeler yolu ile elde edilen sonuçlar incelendiğinde İstanbul sokak
lezzetleri; deniz ürünleri, hayvansal kaynaklı ürünler, hamur işleri,
içecekler, tatlılar, meyveler ve diğer gastronomik değerler olmak üzere 7
farklı başlık altında sınıflandırılmıştır. İstanbul’un farklı coğrafi
bölgelerinde farklı özelliklerde tüketilen sokak lezzetlerine yönelik talebin
her dönem yüksek olduğu ve sokak lezzetleri servis eden işletmelerin genel
olarak oldukça amatör düzeyde hizmet verdikleri gerçekleştirilen gözlemler
neticesinde saptanmıştır. Ayrıca, İstanbul sokak lezzetleri olarak betimlenen
yemeklerin pek çoğunun Anadolu’dan İstanbul’a olan göçler neticesinde İstanbul
sokak hayatına dahil olduğu da çalışma sırasında elde edilen sonuçlar
arasındadır. Diğer yandan Osmanlı İmparatorluğu döneminden kalma “şerbet” ve
farklı yemek alışkanlıklarına da günümüz İsanbul sokak
lezzetlerinde de rastlamak mümkündür. Ayrıca
İstanbul sosyal hayatında uzun yıllardır var olan gayrimüslim unsurlardan da
“topik” ve “lakerda” gibi çok özellikli besinlerin miras kaldığını söylemek
mümkündür.
