Mushrooms are known as one of the foods that support human health with their rich nutritional content and are often used as a medicine. Shiitake mushroom (Lentinula edodes(Berk.) Pegler) is a type of capped edible mushroom belonging to the class Basidiomycetes. Shiitake is a mushroom that was originally grown and sold only in the Far East, but more recently in European markets. In this study, one of the qualitative research methods, compilation technique was used. As a result, the benefits of Shiitake to human health were emphasized and evaluated within the framework of gastronomy.
Mantarlar, zengin besin içeriği ile insan sağlığını en çok destekleyen gıdalardan biri olarak bilinmektedir ve sıklıkla ilaç olarak kullanılmaktadır. Shiitake mantarı (Lentinula edodes(Berk.) Pegler), Basidiomycetes sınıfına ait, şapkalı yenilebilir bir mantar türüdür. Shiitake, başlangıçta sadece Uzak Doğu'da yetiştirilen ve satılan, son zamanlarda ise Avrupa pazarlarında yaygın olarak görülen bir mantar çeşididir. Bu çalışmada nitel araştırma yöntemlerinden derleme tekniği kullanılmıştır. Sonuç olarak Shiitake'nin insan sağlığına olan faydalarına vurgu yapılmış, gastronomi çerçevesinde değerlendirilmiştir.
