Abstract
Hidrojen
peroksit (H2O2), kolay erişimi ve güvenli kullanım
olanakları nedeni ile pek çok sektör tarafından kullanılmaktadır. Su ürünleri
sektörü açısından ise: iyi bir dezenfektan olmasının yanında uluslararası
federasyonlar tarafından da kabul edilen bazı balık hastalıkların önlenmesi ya
da tedavisinde kullanımına uygunluğu ve balık yumurtalarının fungal ve
bakteriyel bazı etkenlere karşı korumada uygulamalarının bulunması nedeni ile
yetiştiricilik açısından sık kullanılan bir kimyasaldır. Su ürünleri işleme
sektöründe ise renk ağartıcı olarak ya da balık filetosunun yüzey
dezenfeksiyonunu sağlamak amacıyla kullanıldığı çalışmalar yapılmıştır. Ancak
mevcut çalışmaların geliştirilerek, hidrojen peroksitin işleme sektöründe
kullanılabilirliğinin araştırılması gerekmektedir.

Abstract
Hydrogen peroxide (H2O2) is used by many sectors due to its easy access and safe use possibilities. In terms of aquaculture sector: It is a chemical that is frequently used for aquaculture because it is a good disinfectant and suitable for use in the prevention or treatment of some fish diseases accepted by international federations and it has applications in the protection of fish eggs against fungal and bacterial factors. Studies have been carried out as color bleach or for the surface disinfection of fish fillets in the seafood processing industry. However, it is necessary to investigate the usability of hydrogen peroxide in the processing sector by developing existing studies.
