The
presence and concentration of water- and oil-soluble synthetic dyes in spice
red pepper in red pepper were determined. Packaged and bulk red peppers were
obtained from bazaar and market. Quinoline yellow, Sunset Yellow FCF, Azorubine
of Amarante, Erythrosine, Allura Red AC, Patent Blue V, Indigotina, Brilliant
Blue FCF Sudan III and Sudan para red B were not detected in any sample at
detectable level. It was found that Sudan II were present in the range of 0.81
to 996.77 mg/kg, Sudan II at a level of 1.88 and 4.62 mg / kg in two samples, Sudan
red para in the range of 0.89 to 21.33 mg/kg and Sudan IV in the range of 8 to
34 mg/kg in just a sample among red peppers. Whereas Tartrazine and Ponceau 4R
were detected in 4% and 24% of bulk red pepper samples, only Ponceau 4R was
found in the packaged red pepper samples at the ratio of 4%. The presence of
Sudan I was detected in 20% of the bulk red peppers, Sudan II in 4% and Sudan
para red in 12%. For packaged red pepper samples, Sudan I was detected in 12%, Sudan
II in 4%, Sudan IV in 4% and Sudan para red in 12%. Synthetic dyes are usually used
in order to intensify the colour of spice red pepper. However, water- and oil-
soluble synthetic are considered to be carcinogens and teratogens. Therefore,
Turkey and the EU do not permit the use of these colours as food additives. As
a result, a regular screening program for the determination of synthetic dyes
in red pepper is required in order to ensure consumers' health by legal
organizations.
