Günümüzde gelişen teknoloji, artan talep ve
azalan doğal
kaynaklar nedeniyle kimyasal kullanımı zorunlu hale gelmektedir. Gıda güvenliği
için kullanılan kimyasal maddelerin başında ise antibiyotikler yer almaktadır.
Kullanılan antibiyotiklerin kimyasal yapıları, hedef hücreyi çeşitli yollardan
etkilemektedir. Ancak zamanla mikroorganizmanın, yapısı ve etkisi farklı
antibiyotiklere karşı dirençli hale gelmektedir. Özellikle antibiyotiklerin
yaygın biçimde kullanıma girmesi sonucu Staphylococcus aureus suşlarında
direnç artışı gözlemlenmektedir. Son zamanlarda β-laktam grubu antibiyotiklere
karşı dirençli S. aureus’lar ve metisilin dirençli S. aureus (MRSA)
dünyada önemli bir problem haline gelmiştir.
