TÜRKİYE’DE YETİŞEN YABAN MERSİNİ MEYVESİNİN FENOLİK BİLEŞİKLERİNİN KARAKTERİZASYONU

Öz

Üzümsü meyveler içerdikleri fenolik bileşikler sebebiyle sağlıklı diyetin bir parçası olarak görülmektedirler. Yaban mersini ise üzümsü meyvelerden biri olup antioksidant özellik gösteren birçok fenolik bileşik yönünden zengin bir kaynaktır. Bu çalışmanın amacı ise, doğal olarak yetişen (Vaccinium myrtillus) ve kültüre alınan yüksek çalı formundaki yaban mersini (Vaccinium corymbosum L.) popülasyonlarının seçilen bazı fenolik asitler ve flavonoidler açısından karakterizasyonunun yapılmasıdır. Meyveler, 2011 yılında Trabzon, Samsun,
Bursa Uludağ (Kirazlıyayla, Sarıalan, Bakacak) ve Bursa Kutluca köyü (Berkeley, Bluejay, Bluegold, Jersey, Brigitta, Bluecrop) bölgelerinden temin edilmiştir. Fenolik asitlerden gallik asit, kafeik asit ve kumarik asit, flavonoidlerden ise (+)-kateşin, (-)-epikateşin, resveratrol, mirisetin, morin, kuersetin ve kamferol bileşikleri HPLC-DAD tekniği ile analiz edilmiştir. Elde edilen bulgulara çok değişkenli data analizlerinden Temel
Bileşen Analizi (TBA) ve Hiyerarşik Kümeleme Analizi (HKA) uygulanarak türlerin analiz edilen fenolik bileşiklerce farklılıkları ya da benzerlikleri değerlendirilmiştir. Uludağ’ın Kirazlıyayla, Sarıalan ve Bakacak bölgelerinden temin edilen meyveler TBA ve HCA ile belirgin bir şekilde diğer türlerden ayrılmış olup gallik asit, kuersetin, kafeik asit, kumarik asit, kamferol ve epikateşinin Uludağ numunelerinde baskın oldukları gözlemlenmiştir. Jersey türü ise mirisetin ve morin bileşikleri ile karakterize edilmektedir. Genel olarak, doğal olarak yetişen yaban mersini meyvelerinin fenolik asit ve flavonoid içeriklerinin kültüre alınan yüksek çalı formundaki yaban mersini türlerine göre daha zengin olduğu tespit edilmiştir.
